Crunchy Granola
Approx 6 serves. Gluten free. Dairy free. Refined Sugar free.
Mmm, the smell of this freshly baked granola coming out of the oven is mouth-wateringly good! I can’t wait for you to try this one. I love baking homemade granola more than store-bought, as not only can you control the amount of sugar and oil, but you can also choose quality ingredients. Plus, it is so much more affordable! I just put this together with the ingredients in my pantry. It is also so delicious straight out of the oven.
This granola is loaded with dietary fibre for a healthy gut microbiome. It has lower sugar than other granolas on the market and, when paired with protein, supports a reduced effect on blood sugar levels. Serve over quality, unsweetened Greek yoghurt with fresh berries, or a crunchy topping on your smoothie bowl, or as delicious as a nutritious cereal with your favourite milk and a tablespoon of nut butter.
Ingredients:
1 cup oats
¾ cup mixed unsalted raw nuts chopped
¼ cup of flax seeds
¼ cup of sunflower seeds
½ cup of coconut flakes
¼ cup of quality oil - such as avocado oil, coconut oil or extra virgin olive oil.
2 tablespoons of sweetener like honey or maple
Pinch of salt
Good sprinkle of cinnamon
Method:
Preheat oven to 180 degrees C
Chop the nuts finely, add them in with the oats, sprinkle cinnamon over the top, and add in the pinch of salt, then stir well.
Now for the marinade: In a separate small bowl combine the oil & sweetener together until well mixed, and then pour them over the oats and nuts mixture. Stir well to make the sure the oats and nuts are completely covered in the oil & sweetener marinade.
Spread out this mixture onto some baking paper covering a baking tray and bake it for about 7-8 minutes until you have a very light golden colour, then take it out of the oven.
In a bowl combine flax seeds, sunflower seeds, and coconut flakes.
Spread out the seeds and coconut mixture over the granola, directly on the baking tray. Use a spoon to mix it all together.
Put the tray in the oven for another 3.5 minutes.
Take the tray out and stir so the coconut flakes that are becoming golden, are now facing down. Then put the tray back in the oven for 2.5 minutes.
Check that it is golden. Once it is, take out of oven. Allow it to cool down completely. And store in a glass jar or other container that is airtight.
This will last about 2 weeks in an airtight container (if it lasts that long!). Store in a cool shaded place.
